    What I'm eating now

    This does NOT taste like 'diet food'.
     
    A delicious dessert recipe taken from the South Beach Diet book:
     
    LEMON ZEST RICOTTA CREME
     
    ½ cup part-skim ricotta cheese
    ¼ tsp. grated lemon zest
    ¼ tsp. vanilla extract
    1 package sugar substitute (use Splenda - it doesn't cause cancer)
     
    Mix together the ricotta, lemon zest, vanilla extract and sugar substitute in a dessert bowl.  Serve chilled.
     
    Serves 1
     
    Per serving: 178 calories; 14g protein; 7g carbohydrate; 10g fat; 6g saturated fats; 155mg sodium; 38mg cholesterol; 0g fibre
     
    You would NEVER KNOW you are actually eating cheese with lemon: it tastes just like lemon-y cream.  Scrumpdillyicious!!!

    OK...this is starting to get OLD

    I'm getting a bit tired of this diet.  I'm starting to really miss certain foods, and I'll be glad when this strict phase is over and I can get back to a more varied diet.  Although...guess what I'm eating RIGHT NOW???  A couple pieces of bittersweet chocolate!  I can have chocolate on this diet, but technically I'm not supposed to have it until the next phase.  Humbug, I say.  Mmmmmmmmmmmmmmmmm  Candy Bar 
     
    Alright...I'm going to try to get some muzak on my site here.  Wish me luck!
     
    &$#@% I can't get Photobucket to work today!  WTF?????   Pissed 
     
    Wellllll...I'm not having too much luck with the music.  The song plays until I leave the screen, but won't start up again after I come back...VEXING!!!!  If anyone has any recommendations for me, I'd be happy to hear from you!  Da Kid says it shouldn't be bigger than 2.5MB, and I think it's 4.12MB, but it's a WMA file...is this why it won't play???  Does anyone know how I would change the size of the file to meet specifications?   Pulling My Hair Out 
     
    Well I guess I'll just have to leave it for now.  I don't have time to screw around with it all night, because I have to get ready for the trip to the cottage tomorrow!  Yayyyy.  We've been waiting for this weekend for months!  I can hardly wait for the time away.  Unfortunately, this means my blog peeps aren't going to get to read my fabulous blogs for a whole TWO DAYS!  LOL I'm sure y'all will miss me like crazy!!!!

    Week Two

    Hey guys I am totally ACING this diet!   Second week now and virtually NO cheating.  I did have three of Andy's french fries at dinner the other day, and a few bites of crab cake, but otherwise I'm on track.  It's funny, but I'm not the most disciplined person on the planet, however when I set my mind to something I follow through with it HARD CORE.  Same thing when I quit smoking back in 1994: smoked my face off New Year's Eve 1993 , and when I got up New Year's Day, I was done - cold turkey.  Never looked back!
     
    Tonight I made myself a tasty dish right from the South Beach Diet cookbook: poached salmon in cucumber dill sauce.  Mmmm.  Fresh asparagus and sauteéd mushrooms accompanied, and for dessert chocolate ricotta creme.  I'm SO not hungry, it's ridiculous.  You really don't miss the carbs all that much...

    Now I have to find a way to squeeze an exercise routine into my insane lifestyle.  Any pointers out there?  If I could get into the habit of going after work, then I could probably manage two days at the gym during the week, and one on the weekend.  I just have to find a few extra dollars to join!
     
    And speaking of exercise, check it out...
     
    During the first part of the triathalon, this guy lost the ass of his shorts...

    Why can't I cut & paste???

    I just spent about a half hour drafting my new blog entry, and then realized that I was editing my entry from yesterday!  D'oh!!!  But when I went to cut and paste my work into a Word document to save it while I backed out of what I was doing, it wouldn't let me!  What's going on?????????  Great, so now I have to type the whole damn thing all over again...

    What a disappointment to show up at the berry farm today to find that it is still closed until later in the month.  After dragging the kids out the door at 10am away from what they were doing, and then forgetting where the farm even was, it was all for naught.  Berry season is supposed to start in mid-June...what gives?  So we stopped at the A&P on the way home and got some instead.  Since we hadn't eaten breakfast yet I thought I'd make the kids pancakes with some of the strawberries.  Josh suggested I throw in some chocolate chips to make them extra delicious.  Mmm, what a yummy brunch it turned out to be!

    Fiesta Week is coming up!  Our city has a diverse, multicultural festival that happens this time each year.  I used to love going with my mum and sisters as a kid and trying out all the tasty foods from all the different cultures.  My favourite pavilions were Dutch, Italian and Greek.  I had a girlfriend who was part of the dancing troupe for the Acropolis pavilion.  we used to go watch her dance in her authentic Greek costume with a group of girls while sampling the homemade goodies.  Mmmm baklavahhhhhhhhhhhh!

    Andy is cooking me dinner tonight.  He is such a little gourmet chef!  I can't wait to see what he whips up for me...

    I am also posting some samples of my kids' artwork...a couple of budding Van Goghs!

    So...this is my weblog!

    Well I guess I have finally arrived at the 21st Century.  I have been keeping a written journal for years and years...and now you can do it online.  Way cool.  This space is still under construction while I figure out what the hell I am doing.

    I am finally going to be an Auntie!  How exciting...I am pumped!  I have the dubious honour of being the only daughter of three to currently have children, and now that my kids are sophomores in grade school my sisters are FINALLY getting with the program: both are due this fall.  Yayyyy I can't wait!  Been so long since I held a squirming, gurgling little bundle of sweetness...

    The kids and I are going strawberry picking tomorrow.  We'll come straight home and turn the berries into tasty delectable treats!!!  Here's a great website I found for recipes: http://www.strawberry-recipes.com.  I'm also going to make some yummy chocolate-dipped berries for me and my Sweetie.  They are so easy it's ridiculous: just get some semi-sweet chocolate chips and nuke them till they melt.  Stir in just enough heavy cream to make the chocolate smooth and to cool it slightly (a few tbsp).  Then hold the berries by the hulls and dip them in the chocolate mixture about 3/4 deep.  Allow the excess to drip off, put them in the fridge on some waxed paper to cool, and voilà - instant aphrodisiac!  ;)
